Vegan Cookie Dough Bites

INGREDIENTS

  • 2 3/4?c?rolled organic oats
  • 3/4?c?unsweetened coconut
  • 1/2?tsp?salt
  • 1/4?c?Rockwell's Coconut Oil
  • 1/2?c?Rockwell's coconut syrup?we used maple flavour, but any flavour is fine
  • 2?tbsp?ground flax
  • 2?tbsp?Rockwell's Chia Seeds
  • 2?tsp?vanilla extract
  • 1?c?vegan chocolate chips or cacao nibs
  • 1/4?tsp?cinnamon
  • 1/4?tsp?nutmeg
  • 1/4?tsp?allspice

INSTRUCTIONS

Prep

    1. Mix your ground flax in 6 tbls of water and set aside.
    2. Meanwhile, split your oats in two, a little over 1 1/4 cup of each. Put one batch in your processor, and blend into a flour. Put the other in the bowl as is. Once flour is achieved, dump in bowl with whole rolled oats. Add in all your other dry ingredients.
    3. Mix together all your wet ingredients, including your flax that has been set aside, in a bowl. Dump into your dry ingredients and mix away.
    4. Throw in your chocolate chips, and any other ingredients you want to add in.
    5. Place bowl with dough in your fridge. Set aside for about 30-60 minutes. This is going to help your form your dough balls.

    Assembly

    1. Once cooled, remove from fridge, and start using heaping tablespoons of dough rounded between your palms or use 2Tbsp cookie scoop for more uniform balls. Place on tray and set in fridge again.
    2. Store your cookie dough bites in the fridge or freezer.
